Husband Favorite

I think the name says it all! I realize there will probably be a variety of flavors, textures, etc, but I'll be fun! Thursday, March 11th

STUFFED MUSHROOMS
I tried to make these a little more low-fat than the original recipe - it used almost an entire stick of butter! If you want to make the full-fat version, butter the pan with 2 tbsp, melt 3 more in the bacon grease and drizzle 2 tbsp over the stuffed mushrooms before baking.

5 slices bacon
12 large mushrooms
1 tablespoons butter
2 tablespoons finely chopped onion (I used shallots)
3/8 cup heavy cream (I used just a splash of 2% milk)
1/4 cup grated Parmesan cheese

Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch baking dish.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Remove stems from mushrooms. Arrange caps in the baking dish. Finely chop stems.
Melt 1 tablespoon butter in the same skillet over medium heat, and mix in onion and garlic. Cook 5 minutes, or until tender, then mix in bacon, spinach, chopped mushroom stems and heavy cream. Bring cream to a boil. Remove from heat and mix in Parmesan cheese, salt and pepper.
Stuff mushroom caps generously with the mixture. Bake in the preheated oven 30 minutes until lightly browned.
    BUTTERMILK SYRUP
    1/2 cup buttermilk
    1 cube margarine (I used butter)
    1 Cup sugar
    1 tbsp Karo syrup (I used light)
    1/2 tsp baking soda

    Boil together for 5 minutes, constantly stirring.
    Add 1 tsp vanilla, stir well. * Make sure to add vanilla at the end*

    DENNY'S FABULOUS FRENCH TOAST
    4 eggs
    2/3 cup whole milk
    1/3 cup all purpose flour
    1/3 cup granulated sugar
    1/2 tsp vanilla
    1/4 tsp salt
    1/8 tsp cinnamon
    1 loaf of texas toast bread

    FAVORITE CHOCOLATE CAKE
    3 c. all-purpose flour
    2 c. sugar
    1/3 c. baking cocoa
    2 tsp. baking soda
    1 tsp. salt
    2 c. water
    3/4 c. vegetable oil
    2 tsp. vanilla
    2 tsp. vinegar

    In a mixing bowl, combine flour, sugar, cocoa, soda and salt. Add the water, oil, vanilla and vinegar and mix well (batter will be thin). Pour into a greased 9x13-inch pan. Bake at 350 for 25-30 minutes or until toothpick inserted near the center comes out clean. Cool completely. Frost with following frosting.

    CHOCOLATE CREAM CHEESE FROSTING:
    4 oz. cream cheese, softened
    1/4 c. butter, softened
    2 c. powdered sugar
    1/3 c. baking cocoa
    Dash of salt
    2-3 tbsp. milk
    1/2 tsp. vanilla

    In a mixing bowl, beat the cream cheese and butter. Add the rest of the ingredients. Mix well.

    too bad my husband's favorites consist of meat, potatoes and very little taste.

    ohhh! he loves chocolate. I better snag a dessert.

    This is a fun theme! I'll have my husband pick which category I'll be bringing. (If dessert, it'll be jumbleberry pie!)

    I love this theme, I just don't love any of GH's favorite food. (Pizza Hut pizza is #1)

    I told Ed I was bringing onions and he informed me his current favorite food was not that dish. So now we're having more chocolate! :)

    can I have the oven heated to 400 to warm up the mushrooms?

    That buttermilk syrup was the best thing ever - I'm already dreaming of more. Everything was so good!
